1/F: Antimo Maria Merone presents a matrix of reimagined Italian cuisine
A never-before-seen tasting menu will be served in our effortlessly stylish dining space overlooking Queen’s Road Central. Celebrated Italian chef Antimo Maria Merone will be taking over Tatler Dining Kitchen in his first solo venture since departing the Michelin-starred 8 1/2 Otto E Mezzo Macau restaurant, where he served as executive chef from 2014 to 2020. Here, Merone will be unveiling three different menu chapters, one after the other, each underscored by his southern Italian roots and enhanced with contrasting culinary traditions.

Chapter 2: Japanese (April 13 - May 8 2021)

For his second menu at Tatler Dining Kitchen, chef Antimo Maria Merone pays homage to Japan: a land that offers so much diversity in terms of flavours and textures, and close source of inspiration for his cuisine. Thrilling seasonal ingredients that speak of spring drive this menu, from tender young shoots to pickled root vegetables.

Chefs Agustin Balbi and Ken Tse unveil new facets of the Japanese-style cafe

Tatler Dining and JIA Group introduce a limited time pop-up of Between Coffee, presenting exclusive Japanese cafe-inspired dishes curated by chef-founder - Agustin Balbi of one Michelin-starred Andō and head chef Ken Tse. Open from 10:00am to 6:00pm, this Central destination is perfect for breakfast, lunch and afternoon coffee breaks.
Milk Bread Toast
Inspired by the traditional breakfasts found in coffee shops of Nagoya, Between Coffee’s signature thick milk bread toast will kickstart the day with avocado pepped up with furikake.
Kagoshima Wagyu Katsu Sando
Exclusive to Between Coffee at HAUS, this luxurious sandwich features marbled wagyu in a light, crisp katsu breading between soft white bread.
Ice Cream Parfait
Another exclusive item, the nostalgic parfaits are served in iconic thick glasses, presenting layers on layers of fresh fruit, ice cream, biscuits and jelly.
Antimo Maria Merone
Napoli native Antimo Maria Merone is one of Asia’s most accomplished Italian chefs, having spent the last six years working with Umberto Bombana of 8 1/2 Otto e Mezzo in Macau. Prior to his tenure at the three Michelin-starred restaurant, Merone took the Italian cuisine of chef Philippe Leveille to new levels during his time at L’Altro in Hong Kong, which received two Michelin stars within four months of opening. Staunchly dedicated to perfecting the art of Italian cuisine, Merone brings an exciting new chapter as he returns to Hong Kong to embark on his next solo adventure at Tatler Dining Kitchen.
Agustin Balbi
Born into a Spanish and Italian family, Argentinian chef Agustin Ferrando Balbi spent several years honing his craft in Tokyo’s veritable Michelin-starred kitchens including Zurriola, Nihonryori Ryugin, and Cuisines Michel Troisgros, and was named one of the Top 10 Japan San Pellegrino Young Chefs (Under 30) in 2015. Aside from shaping his culinary philosophy, Balbi’s time in Japan also holds a special place in his heart – this was also where he met Yoshika, his wife and the mother of his two young children, who inspire the menu at Between Coffee. Chef Balbi was awarded Best Young Talent of the World 2019 by La Liste and debuted at number 87 on the list of Best Chefs of the World 2019. In 2020, he opened Ando with JIA Group, and earned the restaurant’s first Michelin star in 2021.
Ken Tse
Ken has been working professionally in kitchens around Hong Kong for over six years. He has made his mark at some of the most celebrated fine dining restaurants in the city, including Ichu, L’Atelier de Joel Robuchon, Haku and more. His philosophy is one of consistency, dedication and creating a partnership both in the kitchen and with diners. With his love for simple but beautiful ingredients, Ken now heads up one of the most top searched café concepts in Hong Kong, Between Coffee by JIA Group.
